Take part in a Butchery 101 class on September 28 at Fleisher's Pasture-Raised Meats in Red Hook, Brooklyn.
Fleisher's Pasture-Raised Meats has been at the forefront of the sustainable meat movement in the United States and around the world since 2004.
Their Butchery 101 is an introductory course that teaches knife skills, safety techniques, basic anatomy, sausage making, beef and chicken demonstrations and includes hands-on lamb and pig carving workshops. Cooking demos, taste tests and lectures on sustainability and sourcing are incorporated throughout the course to give each student an overview of what being a sustainable butcher means to us and the communities we serve.
We supply you with all necessary equipment and provide you with worksheets, recipes, and a set of knives to work with for the day. Participants will see firsthand their local food system in action. This course will be offered in a series over 2-3 days in our main butchering facility in Red Hook, Brooklyn.
