Restaurateur Camilla Marcus’s west~bourne café in SoHo, New York, was created to demonstrate that mission-driven, sustainable capitalism and enlightened employment practices can both survive and thrive in the often cutthroat hospitality world. The restaurant eschews the traditional “front-of-house/back-of-house” hierarchy: There are no porters or dishwashers, and all team members are paid equally. Additionally, 1% of each sale is donated through the Robin Hood Foundation to The Door, a local organization supporting youth development services. Marcus, 34, has also set the lofty goal of earning a Zero Waste certification for the restaurant, a level of environmental sustainability that includes composting, upcycling food scraps, energy-efficient equipment, and even napkins made from recycled denim. A Los Angeles native, Marcus trained in both business and law at the Wharton School and later New York University, as well as earning a culinary degree from New York’s International Culinary Center. Before founding west~bourne, she worked in real estate investing and served as the Director of Business Development for acclaimed operator Danny Meyer’s Union Square Hospitality Group.
