You will be blending wine from one of only two wine regions to earn Spain’s highest wine designation of Denominació d'Origen Qualificada (DOQ) - Priorat. The Priorat vineyards and olive orchards are often over a century old. This small, craggy corner of Catalonia (just an hour outside of Barcelona) is known for its hot and dry climate, steep hillsides and famed llicorella soil, a combination of slate and quartz that forces vines to dig deep into the earth for nutrients. While these challenging conditions lead to incredibly low yields, they also give their primarily Grenache- and Carignan-based wines an unmistakable concentration and minerality that’s sought after by connoisseurs worldwide. Here more than almost any other wine region in the world, revered centuries-old tradition meets modern winemaking know how.
The pioneers of the DOQ are still making their legendary wines, while a new generation of winemakers has more recently established themselves. The members of this new generation bring winemaking experience gained around the world, but still choose to respect the original grapes and winemaking techniques brought here so long ago by the Carthusian monks. Dominik's project Terroir Al Limit, though begun only in 2001, has already firmly established its international reputation. The German-born Huber had his first eye-opening culinary experience traveling around Italy at 19, and returned home to be a chef. In 1996 he branched out into wine with his first internship at the Priorat winery Mas Martinet. He returned for two more harvests with the pioneering Perez family, during which time he and his then-partner, South African Eben Sadie, conceived of the Terroir al Limit project. After their humble beginnings making just 500 bottles with purchased grapes, the adventurous pair sought out and bought their own vineyards and cellar in Torroja del Priorat, where they continued their quest to keep alive the old Priorat winemaking traditions. This meant working with only the classic grapes, using no new oak in aging, and none of the typical interventionist techniques. When the partners amicably separated in 2011, Dominik stayed in Torroja to run the project. Since that time he has grown it — even expanding into neighboring Montsant with a new line of wines called Terroir Sense Fronteres — and turned his focus to producing only biodynamic wines in an elegant, fresh style perfect with the inventive local cuisine.
