The Cooking Lab, typically closed to the public, is home to a state-of- the-art research kitchen, laboratory, and publishing house that is the backbone of the Modernist Cuisine exhibit and books. You will experience a guided tour through the Cooking Lab and meet some of the research and development chefs who work alongside chemists, physicists, and machinists to push culinary boundaries.
Each guest will also receive a signed copy of The Photography of Modernist Cuisine by Nathan Myhrvold.
Modernist Cuisine is an interdisciplinary team in Bellevue, Washington, founded and led by Nathan Myhrvold in 2011. Home to a state-of-the-art research kitchen, laboratory, and publishing house, the team at the Lab has published the much acclaimed five-volume 2,438-page Modernist Cuisine: The Art and Science of Cooking, followed by Modernist Cuisine at Home in 2012, which applies the insights of the original book in a format designed for home cooks. Modernist Cuisine's most recent publication is Modernist Bread – five volumes all about the art, history, and science of baking.
The group at Modernist Cuisine includes scientists, research and development chefs, and a full editorial department—all dedicated to advancing the state of culinary art through the creative application of scientific knowledge and experimental techniques. On top of that, their research kitchen consists of top culinary technologies such as a centrifuge, rotary evaporator, freeze dryer, rotor stator homogenizer, pizza oven, laser cutter, autoclave, and even a soft serve machine. Chefs therefore get to work alongside chemists, physicists, and machinists in the pursuit of new cooking innovations.
